What's Happening at Terroir Select Coffees
The freshly harvested crops are here! Last week, we received Guatemala Flor del Cafe and the Ethiopia Yirgacheffe. Now, to retain the freshness and unique qualities of these special coffees, we will remove the beans from their jute bags, repackage them into vacuumed bags and store the bags in deep-freeze. We were excited to find that this lot of Ethiopia Yirgacheffe is the best crop that we have tried in the past 2 years. Both of these coffees are once again available on our website, http://www.terroircoffee.com.
Last week we hosted our first Open House here at our roasting facility in Acton, MA. Thanks to everyone who attended. We will have another open house soon and will feature great ways to make iced coffee.

We are excited to announce the arrival of the Aged Sumatra. This Vintage 2002 Sumatra has been aged to perfection, retaining its unique sweetness over the past 3 years. Smells reminiscent of cigar-box and fresh sweet tobaccos pervade this coffee from the aroma to the cup. Notes of brandy and tawny port, roots, leather, autumn leaves and butterscotch entwine into a unique coffee experience. Terroir Coffee Tip
For the best tasting coffee, you want your brewer to heat the water to between 195 and 205 degrees Fahrenheit. Unfortunately very few brewers reach these high temperatures. If the coffee is not brewed at around 200 degrees, you wont get the full flavor of the coffee. The Technivorm (available on our website, http://www.terroircoffee.com) brews consistently at 200 degrees, giving you a full flavor cup of coffee every time.
Coffee Myth #1: Shiny Oily Coffee is better than Dull Coffee
Reality: It is a common misperception that shiny dark oily coffee is better than dull lighter oil-free coffee. In actuality the oily surface is caused by a degradation of the bean that allows oils to bleed through pores onto the bean surface. This degradation can be caused by age, a very dark roast, or both. These oils actually retain the complex aromas of the bean. So if these oils are allowed to escape, the coffee will quickly become bland tasting with a strong stale odor. Over time, these oils will actually coagulate on the surface of the bean to give the coffee an even more bitter, stale taste. At Terroir, we light roast to retain the aromatic oils that give each coffee its unique flavor.
